Avocado Chicken Pops.

Avocado Chicken Pops.

These little chicken pops are fab for fussy eaters who are tempted by fun twists on somewhat mundane dishes – what’s even better is that they are also dairy, soya, wheat, gluten and egg free! You can even sneak in some avocado goodness – it’s fail proof!

You will need –

2 medium chicken breasts.
150g gluten-free breadcrumbs.
1 ripe avocado.
A drop of alternative milk.
Approx 150ml Oil, to fry.

Firstly, cut your chicken into evenly sized strips that are roughly 4cm thick.
Remove the seed from the avocado and scoop the remainder into a bowl, mash with a little alternative milk to achieve a smooth consistency, then coat each chicken strip in avocado before coating in the gluten-free breadcrumbs.

Heat the oil in a pan until sizzling, then place each pop into the oil and allow to shallow fry until golden brown. Flip the pops over and continue to fry until each side is crispy.
Remove any excess oil and your done!

Avocado chicken pops - dairy, soya, gluten, wheat and egg free. Perfect for fussy eaters.

I love avocado and these a such a great and easy way to get another veg into kids’ diets. I wonder if I would get it past J though – he picks up on the tiniest difference in anything I serve! #freefromfridays

Ooo clever, I like the idea of using avocado as the ‘glue’, we usually use egg, but I’m interested in giving these a try.

Thank you for this recipe. My 3 yr old son is a picky eater but loves breadcrumb coated chicken. He has very occasional wheezing and suffers terribly with hay fever so I’m going to phase out gluten to see what difference that makes. Don’t like having to give him his ‘puffer’ but thankfully it’s not very often. I bought the Mrs Crimbles breadcrumbs but haven’t used them yet as he’ll probably notice they are not the right colour or consistency! Please can you tell me which brand of gluten free breadcrumbs you use as these look like the right colour!

A comment is always appreciated!
