Black Bean & Carrot Burgers.

90g black turtle beans – soaked in water for 1 hour.
1 egg.
1 medium carrot – peeled and chopped.
1 garlic clove – finely chopped.
Juice of half a lemon.
2 tbsp flour. (I use this one – its fab!)
1 tsp corinander.

Firstly, drain the black turtle beans before placing them in a strong blender or nutribullet. Add the rest of the ingredients and blend until you achieve a slightly gritty texture with a light purple colour. Heat a little oil in a pan over a medium heat. Once ready, add a tbsp of the mixture to the pan, spreading it out slightly with the back of the spoon. Allow to cook for 2-3 minutes on each side. Repeat until all mixture is used.

Serve immediately. Suitable for freezing.
