Pecan & Mango Granola.


Granola is a great way to get lots of goodness from nuts and seeds into your little one – I’ve been making granola for a long time but this is our new favourite version!

You will need –

300g gluten free oats.
50g dried mango.
50g pecan nuts.
50g sultanas.
50g golden linseed.
50g pumpkin seeds.
3 tbsp coconut oil – melted.
3 tbsp honey.

Firstly, add your oats to a large bowl, then add the dried mango, sultanas and golden linseed. Give the mixture a good stir. Add the pecan nuts and pumpkin seeds to a food processor and blend for 5 seconds to break them down if you’d prefer a less chunky granola, if not you can add them with the mango, sultanas and golden linseed. Once all the dry ingredients are combined add the melted coconut oil and honey.
Give the mixture another good stir, breaking down any clumps that form.

Add the oat mixture to a large dish and bake at 180 degrees for 20 minutes, ensuring you stir the mixture regularly.

Store in an airtight container for up to 3 weeks – if it last’s that long!

    Oooh yummy! Love a good granola recipe and with littlies with allergies its definitely a must!
